The whole hog butcher class is a wonderful experience to learn how to breakdown an entire pig to its individual cuts. The class begins with a few handouts and then we’ll go over safety. After that I, the head butcher, will fully demonstrate the complete breakdown of half a pig. After a short eat and drink break we will resume with the second half where I will simply set the second half of the pig out for the class to do everything. You will get hands on with the knife, handsaw and possibly the famous cleaver.
